Wait until you run through some beef burnt ends. I gotta say, I’m partial to pork because I can’t resist salt and sweet but some saucy beef ends will make your arm hair stand up.

I’m going to make some beef burnt ends next weekend out of some beef belly. I’ve never tried beef belly, but I’ve heard if it’s done right, I won’t want to ever smoke a brisket again. I guess I’m going to find out.
